Quick and Easy Lemon Ricotta Ravioli with Pecorino and Basil

This was one of those meals that fell together as I was raiding my fridge in search of quick, non-cereal dinner option. I had been out of town on a week-long East coast road trip and was too busy (read: lazy) to go to the grocery store to replenish my barren refrigerator, and eating out again was the last thing I wanted to do. You know how it is, after a road trip sometimes you just want “real food,” that is cooked in a house, and has to be eaten with a fork. It’s only natural after a week of trail mix, apples, donuts, Swedish Fish, and Coke, right?

So as I stared deeply into the refrigerator, noticing all of the things that I probably should have thrown away prior to said trip, I saw some Trader Joe’s ravioli perched on top of a two week old birthday cake.  Seeing this as a solid start to my meal I grabbed it and noticed that it was a fancier version of ravioli than I typically buy. This was a lemon ricotta flavor. Intrigued and excited about this new flavor I began to think about what I could pair with it. Obviously you can’t go dump regular old tomato sauce on the delicate flavors of a lemon and ricotta, so the jar of pasta sauce was out. Next I thought about making a light cream sauce, but quickly realized I had no cream or milk in the fridge. Bah! And then out of the corner of my eye I saw my little ole basil plant sitting in the living room. I moved it into the living room so it could get more sun and have a fighting chance at survival in this “black thumb” household. And you know what? It was still alive! (Largely in part due to the graciousness of my awesome roommate that watered it for me while I was out of town, so thanks Em).

Basil

The little grocery store basil plant was actually flourishing and needed to be harvested. Perfect! Lemon and basil are a perfect combo. I decided to keep the sauce light so the light, fresh flavors of the basil and lemon could shine through and used a little garlic olive oil (side note: are you using flavored olive oils?? If not, do it! They are game changers, for sure), sea salt, cracked pepper, and some Pecorino Romano cheese that I had laying in the fridge. Pecorino is a hard sheep’s cheese with a great salty flavor. I’m a sucker for the fancy cheese station at any grocery store and love trying new flavors and types of cheeses. One thing that is awesome about buying those little fancy blocks (as opposed to the generic pre-shredded cheeses) is that they seriously last forever. Obviously it depends on the cheese, but I’ve had this Pecorino Romano block for over 6 months and it’s still flavorful and mold-free. Just sayin… Also, the Pioneer Woman says to never buy pre-shredded cheese. Always buy the block and shred it yourself. Your taste buds will thank you, I promise.

Ok, so moral of the story is…

  1. Randomness and creativity pay off in the kitchen
  2. Flavored olive oils—go try ‘em
  3. Fancy cheese last forever and can snazz up any plain-jane meal
  4. When it comes to cheese buy the block and shred yourself

Lemon Ricotta Ravioli with Pecorino and Basil

Ingredients
  1. 1 package (or two if you’ve got a large crew) of Trader Joe’s Lemon Ricotta Ravioli
  2. 1-2 grilled chicken breasts, sliced or shredded (if you’re looking to add a little more substance to the meal, I didn’t this time)
  3. 4- 5 fresh basil leaves, cut into long, thin strips
  4. 2 teaspoons garlic olive oil
  5. 1 teaspoon extra virgin olive oil (you can do all garlic olive oil if you want a real punch of flavor)
  6. 1/3 cup Pecorino Romano cheese (or parmesan, mozzarella, whatever you like), use shavings or grated ( I prefer larger pieces of cheese so that you get a nice bite of flavor)
  7. Salt and cracked pepper, to taste
Instructions
  1. Bring pot of salted water to boiling. Once water is boiling add ravioli from package, keeping the heat high enough to allow a rolling boil to continue.
  2. Cook pasta for 3-4 minutes until al dente. Keep your eyes on the prize here and don’t get distracted. Three minutes is not enough time to multi-task and do something else, I promise. Mushy ravioli is THE WORST. The pasta will get soggy, it will tear easily, and before you know it the delicious filling is bursting out and you have goulash instead of ravioli. And let’s be real, nobody wants to eat that.
  3. Once pasta is cooked, place in colander, drain and shake off excess water, and place in serving bowl.
  4. Add the three teaspoons of olive oil and gently stir until ravioli is well coated. Depending on preference you may want to add a little more or a little less. Just follow your heart on this one. You want the pasta to be lightly coated so it doesn’t stick together and so it has some great flavor from the garlic olive oil.
  5. Add cut or shredded chicken (if desired). Note: If you decide to add chicken you will likely need to use a little more olive to coat the chicken as well.
  6. Add cheese, basil, and lightly toss with ravioli to mix well. Add salt and pepper to taste. Note: if you are using a salty hard cheese like a pecorino or a parmesan you will likely need less salt than if you use a mozzarella.
  7. Enjoy!

The weather is still too hot around here to convince my mind that it’s Fall and as a result I’ve had a resurgence of summer salad cravings. This salad is a perfect end of summer entrée filled with peaches and made hearty with the balsamic and chicken. Bits of crispy prosciutto add a salty accent and the whole salad just comes together beautifully.

I love mixing sweet with savory and this marinated peach and tomato salad with buttered toast is a simple, end of summer meal. Make sure to grab a nice crusty Italian loaf and your taste buds will be singing. You could even chop the tomatoes and peaches a little smaller and create a tomato/peach bruschetta.

I don’t know what it is about brie, but I’m drawn to it. I might as well create an entire Pinterest board it. Anytime there’s a recipe that calls for brie I pin it. It’s something about the creaminess that is magical and it’s distinct, yet subtle flavor. It can stand alone or be paired with other fixins. It’s just the bomb. So when I saw this recipe for peaches, brie, and basil I let out an audible, “Yessss!” Then when I saw the recipe was from Two Peas and Their Pod I was even more excited because Maria and Josh never let me down. So get fancy and make this “grown up grilled cheese.” Treat yo self.

4. Bacon-wrapped grilled peaches with balsamic glaze
Excuse me, duh, why didn’t I think of this? When is wrapping something in bacon a bad idea? Hmm….never. I can’t actually think of something that was wrapped in bacon that I didn’t like. So naturally sweet peaches and salty bacon are a fantastic combo. I haven’t tried this one yet, but I’m itching to. So if you beat me to it let me know how amazing it is, okay?

I mean, whoa. Peaches, pistachios, cardamom, and rose whipped cream!!!! Talk about an all-star cast of ingredients wrapped up in a flakey pastry carb.  Holla! I’m a sucker for interesting combinations and complex flavor profiles. They just speak to my inner adventurer and creative. If this were on a menu at a restaurant hands down I would order it. But since this is a recipe on a Pinterest board I have only yet stared at it longingly. I mean who has rose water laying around? But if you’re like me and you like having a few of these fancy ideas laying around for the perfect dinner party or fancy gathering, this guy needs to be added to the list.

You don’t need more than a picture to figure out this simple recipe. Peaches + Mozzarella + Basil + Balsamic = Caprese Perfection.

7. Pavlova with roasted peaches, blackberries, and mascarpone
I ate this last night and it was amazing. In fact, I ate two of these last night. It was so good. The pavlova was not as intimidating to create as you may think and the mascarpone cream middle was heavenly. I could have stopped there, but then we added the roasted peaches and blackberry sauce and my taste buds began to chirp a sweet summer tune. Mmmm. It was a perfect combination of sweet and creamy. We made just a couple adaptations to the recipe by not smashing the blackberries (we left them whole), we cooked the blackberry sauce until it was an extra thick syrup, and we garnished with some fresh basil to balance some sweetness and enhance the awesomeness. And it worked. This was a crowd favorite for sure.

Not all recipes or food blogs are created equal. This is true. But Joy the Baker has been winning my trust over the years and is now one of my go-to spots for sweet treats and desserts. Pack-it Freezable Lunch Bag: I have a frequent resolution to take my lunch to work, you know, to be healthy and avoid eating potato munchers and mozzarella sticks from the hospital cafeteria. It’s a fleeting goal, so I’ve tried to work extra hard at it for consistencies sake. As is the case with most resolutions/goals, I decided I didn’t have the right tools to be successful in this endeavor. A big problem with bringing my lunch is that I rarely want to eat said food. And commonly it has to do with the fact that when I open my lunch from home it usually contains a room temperature yogurt and an awkward half-defrosted, melting Lean Cuisine (making it very tricky to reheat according to package directions!). Ew gross. However, I would like to say that I have yet to develop any sort of food borne illness from consuming 12-hour room temp yogurts over the years. But each day I am baffled how the act of taking my target-sack-wrapped lunch out of my bag and walking it down the hall to the work fridge escapes me. It’s a quick walk, but it never seems to happen.

The moment I get to work it seems my phone rings, my pager goes off, or I’m seduced by an email and before I know it its 2:00pm and the lunch sack is still sitting on the floor next to my bag. “Dang it!!!,” I mutter and defeatedly reach for the lukewarm yogurt to keep my ravenous stomach from eating itself. Everyday I vow to remember, but I’d say I’m about 1/5. So when my friend told me about the Freezable Pack-it lunch bag I was instantly interested. The entire lunch bag acts as one big ice pack and keeps your lunch cool for 11 hours! That’s exactly what I need. Logitech Bluetooth Multi-Device Keyboard: I’m sitting here writing (typing) this post using my new FAVORITE tech product purchase! It’s the handy Logitech Bluetooth Multi-Device Keyboard for Smartphones, Tablets, and Computers–it’s compatible with Apple products, Windows, Android, and Chrome devices. I love that I can seamlessly change between typing on my phone and my iPad. How awesome is that! And if I really wanted to, I could have a third device connected to this keyboard. If you didn’t catch that…that is 3 Bluetooth enabled devices at once! All you have to do is setup up your desired devices and with a twist of a button you can switch between devices. So simple and easy! A monkey could do it! And every time that I use this keyboard I think to myself…why did I not buy this thing a long time ago.

Its been sitting in my Amazon shopping list burning a hole in my Amazon account like money burns a hole in my pocket! Haha! I kept going back and forth asking myself if it was something I needed and worth the money. I finally ordered it. I’ve only had it for a couple of weeks and I already love it! Now that I have it and have been using it, I’ve wondered why I didn’t invest in this thing sooner.

I love being able to use my phone but it’s great with my iPad too because I find it pretty hard to type up a paper on an iPad. This keyboard is portable so you can use it anywhere with no need to plug it into an outlet. You only need 2 AAA batteries. It’s been a lifesaver when I’ve had to type up a long email, blog post, or recipe. And besides the practical factor of this keyboard, I’ve been challenging myself and my family to typing speed tests with the app TapTyping. I don’t know about you but I used to love playing typing games in elementary school when we had to learn type and practicing your home row proficiency. Is there anyone else that used to love typing tests and games? This keyboard is practical and fun!

Day Designer Weekly/Monthly Planner: Call me old fashioned, especially in a digital world, but I can’t resist purchasing a a cute monthly planner at the beginning of each school year. When I walked into Target last week they had so many cute planners calling my name. I decided to go with this cute pink and navy striped planner becaues it easily fits in my purse.

Back to School Apple Rice Krispie Treats

I’m a sucker for all things “back to school.” I love the excitement of new clothes, new pencil boxes, a changing season, and new opportunities—or maybe I just love buying new things? Regardless, back to school is a time to celebrate! In my family we have a tradition of getting together the week before school starts for our annual “Back to School Fashion Show.” All the kids (now nieces, nephews, grandkids) bring their new school clothes and model them down the “runway” of the living room. It’s a fun way to get excited about the upcoming school year and celebrate with the whole family. 

After the “fashion show” is over we always have some treats and that’s where these apple-shaped rice krispie treats steal the show. They are really easy to make and get their red color from strawberry Jell-O. So actually they are strawberry flavored, apple rice krispie treats, haha. They are a tasty spin on an old classic. They are devoured by kids and adults alike. And you know what they say…”an apple a day keeps the doctor away.” Make a batch for your kids as a back to school treat, take them to a teacher, or make them for yourself to celebrate (or mourn—depending on the minute) that kid’s are back in school and Fall is on it’s way.

Apple Rice Krispie Treats

Ingredients
  1. 6 cups Krispy Rice Cereal
  2. 50 large marshmallows (there are usually 40 in a standard package, but the extra ten give it just a little extra boost of marshmallow-y goodness)
  3. 3 tablespoons real butter
  4. 1 small 3 ounce package of Jell-O, strawberry flavor
  5. 25 small Tootsie Roll Candies
  6. 1 small tube green icing
  7. Non-stick cooking spray
  8. Wax Paper
  9. Red Food Coloring, optional
Instructions
  1. Melt marshmallows and butter in large saucepan over medium-low heat.
  2. Once melted and combined into a gooey sauce, stir in Jell-O package (just the powder, no water). Continue stirring until well mixed. At this point you can add a couple drops of red food coloring if you want your apples to be more vibrant.
  3. Next, stir in the Rice Krispies cereal until it well incorporated and covered with the marshmallows.
  4. Spray hands with non-stick spray and take a small handful of covered cereal and roll mixture a ball (size should be a little larger than a golf ball—no really. You’ll wanna make them bigger, but don’t. Just trust me on this).
  5. Place balls on wax paper to cool. The Jell-O helps them to keep their shape.
  6. After the balls have cooled for a few minutes, make an imprint in the top of the “apple” with your thumb and place the unwrapped tootsie roll inside the hole for the “stem.”
  7. Pipe a small leaf or two on top of the “apple” to finish it off. Frosting seems excessive, but is surprisingly a perfect touch in this sugar on sugar treat.
Notes
  1. TIPS: Try not to eat more than three at a time. You’ll get a gut-ache, or so I’ve heard. I never have problems with self control and sugar.

Summer might be coming to an end, but that means the best season of all is upon us….fall. There are of course the obvious reasons as to why this is my favorite time of year (hello pumpkin everything) but one reason I love the fall is because I can actually enjoy getting outside and hiking with my family. The temperature is 100 percent more to my liking for being active and you get to enjoy the leaves changing color with the beautiful scenery. 

Lucky for me, my husband is Mr. Outdoors and is always keeping me fully stocked with everything and anything I could possibly need for hiking and camping. Whether I’m planning a short hike or a longer adventure, there are a few items I always bring along.

Flight 18 Peregrine Pack 
This pack is great for easy day trips along the trail. It has a roll-top to keep debris from getting in, but makes it super easy to slide gear in and out through the wide opening. Another plus is you can roll up the excess bag to keep it more compact or even fold it into a zippered pocket to pack down to fit inside a purse or jacket. How awesome is that?!

BugBand
If you hate the smell of bug spray as much as I do, BugBands are a fun way to ward off unwanted insects without a sticky smelly mess. These bands can be worn on your wrist, ankle, backpack or even pet collars and will work for 120 hours. BugBands are safe for kids and come in a lot of fun colors. 

Adventure Medical Kit
The number one thing I always make sure to take with me, NO MATTER WHAT, is a medical kit. The Adventure Medical Kit is awesome because you can restock what you need without wasting money on a whole new kit. They offer a wide variety of kits from 1-person basic kits, to multi-person multi-day rated kits for the big adventures. You can even go as far as getting one that’s waterproof. Believe me, they are worth every penny!

Bear Spray 
My husband always makes fun of me because I’m a nervous nelly when it comes to wildlife, especially with my daughter around. So I tend to keep bear spray with me just in case. 

Petzl Headlamp 
This is an absolute MUST to take on any trip, whether a short hike or big adventure. A head lamp can save your life by either guiding you out of a bad spot if you get lost and end up staying out longer than expected. It can even be used as a signal device  in the event of needing assistance. You never know

Go-girl
If you haven’t heard of this, you’re missing out. The go-girl is awesome. All I can say is it’s a lot easier to use this then figuring out another way to go on a trail. 

Eco-Trekker
If you have some time to kill, this is a great way to relax on the trail or at a campsite. It’s super light making it easy to pack and comes in a variety of colors.

Nalgene Bottle
We love Nalgene in our home because they will not shatter or crack. They are BPA free and come in a million different colors and styles!
